Fantastical Bean Salad

I got this recipe from my acupuncturist, Janet. It's full of protein and makes a super tasty lunch (I love it with a can of tuna.. I know, not very vegan of me) or a quick snack to fill you up.. Enjoy!

1 can black beans
1 can great northern (or navy) beans
1 can kidney beans
chopped celery (as much or as little as you like!)
chopped red onion (same goes here)
salt and pepper
olive oil
balsamic vinegar

You can really add any kind of bean you like. I added the white beans to her recipe and never looked back :)
Drain and rinse the all the beans. Mix the ingredients together and serve! It gets better the longer it sits and colder it gets!

I'm going to cook up a batch of adzuki beans this week and may try them in the salad depending on taste and texture! I'll let you know how it works out!
