I have mastered my hummus recipe!! Woo hoo! Instead of using a ton of oil to get a nice smooth consistency, I just added in about half of the juice that I drained out of the can of chick peas. SO TASTY!! I also added a little swirl of sesame oil instead of tahini, a squirt of lemon juice, salt, pepper and garlic. It's fantastic! I had some with lunch as you can see here.. I know, there could be more veggies on the plate. Oh well! It's my favorite bean salad, radishes pickled in ume plum vinegar (from The Kind Diet) super crunchy and salty.. Yum! Also some organic flatbread that I swiped from Jason's Deli the other day. This meal made me extremely happy :)



Speaking of happy.. Look at me! I wish I had taken my measurements before starting the 30 Day Shred. I've noticed a BIG difference in my arms. It's such a great workout! Cassie really motivated me when I wasn't feeling it.. We did Level 3 and then a HOT 30 minute walk. And I finished my night with 10 minutes of hula hoop. WHEW! I was exhausted but really feeling good. And so accomplished! (Don't mind the spilled water on my shirt.. We all know how clumsy I am!)



Only 10 days left of the shred! I'm hoping to add in double workouts this week, especially once Tyler starts school (this THURSDAY!! AAAHHHH!!!) As good as I'm feeling and doing with the workouts and vegan diet, I'm SO ready for Gabe to be home..
