So, I found a vegan-friendly lumpia wrapper (wheat flour, coconut oil, water and salt!) in the frozen food section of my commissary. YAY! I had no idea what to do with them, until tonight! Veggie Spring Rolls!
Here's what I put in them: cabbage, zucchini, carrots, onions and sprouts
At first I was really intimidated by the paper thin wrappers, especially trying to peel them off the layers of paper, but they're pretty tough! It turned out SO EASY!
I brushed them with a little sesame oil (YUM!) and baked them in the oven at 350 for 20 minutes. They didn't get very brown, but they were super crispy crunchy! Delicious!! I made homemade fried (brown) rice. Tyler and I PIGGED OUT! This recipe is definitely a keeper!! I played around with a vegan dipping sauce, but I'm still working on it.. I won't even tell you how many I ate (FOUR!)
