Sooooo... Level Two of the Shred. Not good. Not good at all. I don't even want to talk about it yet. ;)

Aahh black eyed peas. How do I love thee? Let me count the ways... :) I added a new way today.. Black Eyed Pea Hummus! I wish I could take the credit, but I actually got the idea from watching last week's episode of "Top Chef." One of the contestants, Kenny, mentioned making it for his dish and that got my wheels turning. I love black eyed peas. When I eat them, they remind me of being a kid. Of course, this ain't yo mamma's black eyed peas.. Those were cooked all day in a big pot with a ham hock. And while delicious, not on the vegan diet I'm afraid. But I digress...

So, I came up with this yummy snack! I drained the can of BEP, and reserved the liquid. Toss them in the food processor with some fine sea salt, ground black peppper, and garlic powder. I added a couple drops of sesame oil, but I don't think you need it. Puree until smooth. I ended up having to add some of the reserved liquid to make it nice and creamy.. It turned out so tasty! I served them in cucumber cups today, but I'm definitely going to stuff a tomato tomorrow for lunch! YUM!

I love those cucumber cups--they are so cute! Maybe Ben would eat those...hmm.
