Last night, I had leftover turkey breast, green peas, mashed potatoes and gravy from the week. I chopped up the turkey, mixed it with the peas, a little gravy and a can of cream of chicken soup. Put it in a casserole dish, spread mashed potatoes on top and baked it till hot and bubbly. It was a HUGE hit! Gabe ended up eating 4 servings! Great way to clean out the fridge and use up my leftovers.
Tonight we're having penne with homemade meat sauce. I'm experimenting with homemade spaghetti sauces so I'll let you know how it goes.
We've got a busy week ahead of us. Gabe has a dentist appointment today, I have one tomorrow and Tyler has his first dentist appointment Wednesday. I also need to call the Treehouse Academy and make an appointment to check it out with Tyler. That's right...After much debate and indecision we've decided to send my little boy to preschool twice a week. It'll probably be Tuesday and Wednesday from 9-2. They have a curriculum so the kids don't just play all day, they learn something too! They also serve lunch and have naps from 12-2. I think I'll be able to get so much done during the days I have to myself. I'm pretty excited. He'll be going to school with a few of his friends so I feel better about that. I'll let you know how that goes too...
