Oh Yummy!

Tyler and I had some dinner company last night so I thought it'd be a perfect time to try a new dessert! Since going completely vegan (and sugar free) almost two weeks ago, I haven't had ANY dessert at night. Maybe an apple once or twice, but I didn't have any yummy almond butter to go with it. Soooo.. I found this recipe on the back of the Lumpia wrapper box. I made a few modifications to make it nice and vegan friendly and holy moly is it tasty!

Banana Roll

1 banana (makes 3 rolls)
maple syrup
3 lumpia wrappers
Coconut Oil (enough to cover the bottom of the pan)

Heat the coconut oil over medium heat. Slice banana into thirds and then cut each third into quarters. Place the bananas in the middle of the wrapper and drizzle with syrup. Roll the wrapper up like a burrito, wetting the edge with water to help it stick. Fry in the hot coconut oil until brown, flipping once. I cut mine in half to serve the kids. And I bet it'd be great with a little maple sugar sprinkled over them!





These rolls are SO GOOD! The banana is warm, but not mushy (not a fan of the mushy banana!) They're nice and crispy and guilt-free!! :) They're also really versatile. You could add all kinds of different fruit and/or cream cheese.. YUM!
