Tonight I made a recipe out of my new book, The 30 Minute Vegan. Something simple and super tasty!!
Pan-Seared Oyster Mushrooms
2 cups oyster mushrooms (I bought a package of gourmet mushrooms that included baby bella, oyster and shitake)
2 teaspoons coconut oil or your favorite oil
1 1/2 teaspoons soy sauce (I only used 1 teaspoon)
2 teaspoons mirin (optional.. I didn't use it)
1 1/2 teaspoons lemon juice (I only used 1 teaspoon)
sesame seeds
Heat a small saute pan over med-high heat. Add the mushrooms and cook until golden brown, about 4 minutes, stirring frequently. Turn off the heat. Add the oil, soy sauce, mirin and lemon juice and stir well for a couple of minutes. Garnish with sesame seeds.
This recipe was super simple to fix and super tasty! I think I'll leave out the lemon juice next time. The soy sauce made it tangy enough!
If I look completely exhausted, it's because I am! We had a super busy day and I'm feeling it tonight.. I was planning on doing laundry and watching a movie, but I don't see that happening. The Nook is charged so I may just lay in bed and read for a bit. Woo hoo Friday night!
