It's Friday! Cassie and I have survived 5 whole days on the Shred workout. Only 25 days to go! Wooo hooo! I'm not super sore like I was the first three days, but I'm definitely feeling it. The diet is going good as well. Also the whole no sugar thing.. I'm rocking it! No more headaches or crankiness. I still take a little snooze in the afternoon, but I'm working on it. Tyler's been waking up at 6:20 so I'm still adjusting to that..

Tonight I made a recipe out of my new book, The 30 Minute Vegan. Something simple and super tasty!!

Pan-Seared Oyster Mushrooms



2 cups oyster mushrooms (I bought a package of gourmet mushrooms that included baby bella, oyster and shitake)
2 teaspoons coconut oil or your favorite oil
1 1/2 teaspoons soy sauce (I only used 1 teaspoon)
2 teaspoons mirin (optional.. I didn't use it)
1 1/2 teaspoons lemon juice (I only used 1 teaspoon)
sesame seeds

Heat a small saute pan over med-high heat. Add the mushrooms and cook until golden brown, about 4 minutes, stirring frequently. Turn off the heat. Add the oil, soy sauce, mirin and lemon juice and stir well for a couple of minutes. Garnish with sesame seeds.

This recipe was super simple to fix and super tasty! I think I'll leave out the lemon juice next time. The soy sauce made it tangy enough!



If I look completely exhausted, it's because I am! We had a super busy day and I'm feeling it tonight.. I was planning on doing laundry and watching a movie, but I don't see that happening. The Nook is charged so I may just lay in bed and read for a bit. Woo hoo Friday night!
