I'm going to start posting some recipes in hopes of staying inspired on this whole life style change.. If anyone has anything they'd like to share, by all means, do so!

My new favorite salad..

Tabbouleh Salad

1- 1 1/2 cups cooked bulgur
2 medium tomatoes, chopped
1/2 medium cucumber, chopped
10 green onions
1 small bell pepper
1/2 cup parsley
1/2 cup garbanzo beans (chick peas)
Lemon Dressing

Mix all ingredients together and toss with dressing.

Lemon Dressing

3 tablespoons lemon juice
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
2 cloves garlic, finely chopped

Now you know me.. I'm a recipe improviser. I don't buy bulgur, I use brown rice. I always have brown rice because I cook a huge batch in the, wait for it.. microwave! (It's the only way I can cook rice!) The first time I made this I didn't have cucumbers so I added some frozen petite peas. I chopped some frozen pepper strips b/c fresh peppers are too expensive and I always buy them frozen. I never have fresh herbs and I didn't have garlic.. I used some chopped garlic or whatever that dried stuff is called :) This salad is FANTASTIC!! Tart and lemony and super delicious.. I love it! Gabe and Tyler both love it also.
