I'm on a Roll...

Since it's super duper cold outside this week (crazy for south Georgia!) I decided to try a new soup recipe. I'm also on a bread bowl kick. The dough mixes in the bread machine so all I have to do is divide it and bake it...YUM! Anyway, dinner was AMAZING! It was super easy and I totally rocked it.

French Onion Soup

2 cups sliced onions
4-6 TB butter
4 cups beef broth
1 TB Worcestershire sauce
1/2 tsp pepper
crusty bread/croutons
Swiss or Gruyere cheese

In large saucepan, saute onions in butter on medium heat until soft and golden. I added 2-3 TB of flour to mix with onions to thicken it a little bit. Add beef broth, Worcestershire sauce and pepper. Bring to a boil, turn down and simmer for 10 minutes. Serve soup in oven proof bowls. Place bread or croutons on top of soup and top with cheese. Place under broiler until cheese is melted and golden.

The soup turned out delicious! Tyler even liked it (once I told him the onions were noodles...HA HA!) I only had monteray jack cheese and it was just as tasty!

Bread Bowls (For Valerie!)

1 cup plus 3 TB water (70-80 degrees)
2 TB olive oil
1/2 cup grated Parmesan cheese
1 t. sugar
1 t. salt
3 cups bread flour (you can also use all purpose flour)
2 1/2 t. yeast

Place all ingredients in bread machine (in order). Set for the dough cycle. Turn dough onto lightly floured surface. Divide into fourths. Shape into balls. Place on a greased baking sheet. Cover and let rise in warm place for 30 minutes. Bake at 400 degress for 15-17 minutes. Cool. Cut off top and hollow out carefully. Fill with your favorite soup/stew. SUPER EASY!
