We're having a pajama day today! It's chilly and rainy outside and we've got no where to go (thank goodness!) We almost didn't make it to the circus yesterday with Tyler not feeling well, but in the end, we decided to go. Glad we went...It was cute and fun and Tyler had a good time, but I don't feel I'll ever have to go a circus again. HA HA! Not my thing I guess. Gabe said it's different from when he was a kid. Oh well. One thing has definitely changed and that's THE PRICES! Remember I told you how Gabe was hyping up the cotton candy? One bag of the sweet stuff (with a felt wizard hat on top) = $12!!! Heck no! We did spend $7 on a large box of popcorn (my sick baby wanted it!) Plus I can use the box top for a scrapbook page (aren't I crafty!) Unfortunately, we didn't take many pictures and none of the family. We suck. Oh well.
Tyler is feeling much better today...He slept well last night (whew! I couldn't take another night on the couch with him.) He's got a bit of a residual cough left and his voice is all squeaky...It's kind of cute, like a mouse. :) And he's just waking up from a three hour nap. Nice! I feel like hot garbage, but at least I get to take the good medicines.
Despite a sickly, messy house, I managed to make dinner last night! Super tasty, warm and comforting. We're having leftovers tonight with fresh salad and crusty bread.
Sausage and Tomato Rigatoni
4 cups rigatoni (uncooked) if you use a smaller pasta, use less, we had a ton!
1 lb italian sausage, cut up
1 red onion, sliced
1/4 cup tomato paste
1/4 cup sun-dried tomato vinaigrette (I found one by Kraft)
1/4 cup chopped fresh parsley
1/4 cup grated parmesan cheese
Cook pasta according to package. Meanwhile, brown sausage in non-stick skillet, drain. Stir in onions and tomato paste; cover. Cook until sausage is cooked through and onions are tender, about 15 minutes. Stir in dressing. Toss sausage mixture with pasta. Sprinkle with parsley and cheese. 4 servings (2 cups each). 490 calories.
The three of us really enjoyed it! I have another recipe using the vinaigrette dressing so it made buying the bottle worthwhile. I post that when I make it this week! Enjoy!
